My dad, Charlie, founded Anza Knives in 1982, and we have stayed true to the process by keeping it old school. We stand by the tradition of making these tools by hand, instead of automating the process, cutting corners, and outsourcing. These tough working knives are meant to be used hard!
THE EDGE: Hunters swear by Anza, and easily skin and dress with these SHARP knives. Ranchers have told us many life saving stories while using their reliable Anza to cut themselves or their livestock free.
THE STEEL: We start with high carbon steel files, then use our secret tempering process that makes the steel stronger and more flexible. Files are usually brittle, but after we use our secret tempering process, they are extremely strong, flexible, and ready to hold the sharpest edge you’ll ever experience. It’s comparable to 1095 steel and we are known for having the SHARPEST edge, Careful: These knives are so sharp they will slice right through the top grade leather sheath. Dry and oil your knife after each use since it is high carbon steel, and don’t ever place in the sink or dishwasher. These are fine tools and should be treated just like how you would treat your gun: Keep it dry and oiled. With lots of use, your knife will probably tarnish over time, but that doesn’t hurt the blade. It just adds to its history and story… And adds to the stories you can tell around the campfire, too! Whether your tales are true or not, they’ll never know!

THE SHEATHS: Genuine top grade leather sheaths are completely handmade by wonderful people in Illinois. You can see with each knife on our website that is listed with either a vertical sheath, crossdraw sheath, or the flat style pancake sheath that is also worn crossdraw style. The flat pancake sheath is the BEST option for blade security. SHEATH SAFETY: These knives are so sharp that they will slice right through the sheath. Do not ever shove your knife into the sheath. THE HANDLES: We use a top secret VERY EXPENSIVE adhesive that is very strong (No need for pins). It is NOT epoxy! We stand by our knives so much that each knife comes with a lifetime warranty. Handle material varies: Dymalux water resistant resin layered wood (stronger than any natural hardwood), Elk antler from natural sheds in Montana, Camel bone, ram horn, buffalo horn, reconstructed stone, micarta, and many more.

Charlie Davis: Founded Anza Knives in 1982 and is the best dad ever! If you know Charlie, you know he’s extremely friendly and always positive. He has put his everything into Anza Knives. The original ANZA master knifemaker. Before starting Anza Knives, he was head of production for another very large knife company. Carol, Charlie’s wife (my mom!), worked alongside Charlie.
Chana: Charlie’s daughter, Chana, now runs Anza and takes care of every aspect of the business, from decision making, website, knife production, administrative duties, customer service, does some knife making, processes orders and shipping, etc. She oversees every part of the business and makes all decisions. Of course, Charlie and Chana talk shop every day and bounce ideas off of each other.
Joe: Joe is a master knife maker, with over 20 years of experience at Anza, and truly has the EDGE. His knives are sleek by design.
John: John has over 10 years of experience at Anza, and is also a master knife maker, concentrating his time on custom knives and elk. He likes building BIG knives.
Lauren: Lauren has been a knifemaker for over 5 years and is the go getter in the shop. She is all over the place, taking care of a little bit of everything.
